Halibut with Lemon Butter Caper Sauce

I usually make this recipe for a dinner party, it’s a real crowd pleaser. I just double or triple depending on the number of guests. It’s quick and easy and presents beautifully! I like to add more Capers than this original from Kitchen Table Cooking School.

Ingredients

Serves 2

Prep time 30 minutes

Cook time 10-15 minutes

2 6 oz Halibut filets

1 Shallot, minced

2 Garlic Cloves, minced

¼ Cup White Wine

2 Tbsp Capers, rinsed

1 Each Lemon juice and segments

2 Tbsp Parsley, chopped

1 Tbsp Butter

Salt & Pepper

A good olive oil for sauteing

Technique

  1. Season Halibut with salt and pepper
  2. Heat oil in pan and add halibut. Brown on each side and finish in the oven. (120-140 degrees internal temperature)
  3. Remove halibut from pan, add shallot and cook until softened, add more oil if necessary
  4. Add garlic and cook for 1-minute (careful not to burn as garlic gets bitter if burned)
  5. Add white wine, capers, lemon segments and juice. Simmer until reduced by half
  6. Reduce heat, add parsley and butter, and season with salt and pepper

Serving

Plate the halibut and spoon sauce over the halibut
