This Pomegranate Holiday Salad is not only a flavorful explosion with the burst of sweet juicy Pomegranate seeds in every bite but also festive with the bright red and green colors. The sweetness of the fruit paired with salted pumpkin seeds is a delightful combination.
2 Cups Spinach
2 Cups Red Leaf Lettuce
1 Apple (choose a crisp variety like Honey Crisp)
1 T Lemon Juice
1 C Pomegranate Seeds
1/3 Cup Sweetened Dried Cherries
1/3 Cup Roasted Pumpkin Seeds
4 Ounces Chevre Goat Cheese (or cheese of your choice)
Maple Vinegar Dressing
¼ Cup Pear Vinegar (Pasta Amore Brand)
½ Cup Extra Virgin Olive Oil
1 T Maple Syrup
½ teaspoon Salt
Cut the apple in small bite size pieces and toss with lemon so they don’t brown. Roast pumpkin seeds in a small amount of oil in a saucepan stirring often. Add salt at the end when the pumpkin seeds are puffed up and turning brown. Let them cool before adding to the salad. Assemble the salad ingredients. Add dressing ingredients to a jelly jar and shake vigorously. The olive oil to vinegar ratio can be 2 or 3 parts olive oil to 1 part vinegar depending on taste.
